A good sardine meal can be simple. Start with fish you enjoy, keep the preparation manageable and try a flavour combination that appeals to you. These are flexible cooking ideas rather than prescribed portions or nutritionally analysed meal plans.

1. Sardines with lemon and parsley

Drain tinned sardines and arrange them on a plate. Add chopped parsley and a squeeze of lemon. Serve with an accompaniment you enjoy.

Keep the fish in larger pieces if you like a more substantial texture. Taste before adding salt: the sardines may already provide enough seasoning.

2. A crisp sardine salad

Chop cucumber and tomatoes, then combine them with leafy greens. Add drained sardines and gently turn the ingredients together. A small amount of your usual dressing can finish the meal.

Prepare the vegetables separately if you want to pack lunch, then add the fish when you are ready to eat. Follow the tin’s storage instructions once opened.

3. Warm tomato sardines with courgettes

Slice courgettes and cook them until tender. Add tinned sardines in tomato sauce and warm through gently without breaking up the fish too much. Finish with black pepper if you like.

This uses the tin’s sauce as part of the dish. Check the ingredients if you are choosing a product for a particular carbohydrate or salt preference.

4. Sardines with roasted peppers

Roast sliced peppers until softened, or use suitable ready-roasted peppers from a jar. Arrange sardines alongside them and add chopped herbs of your choice.

It is a useful option for reusing prepared vegetables. Keep cooked ingredients refrigerated appropriately and reheat according to food-safety advice.

5. Simply grilled fresh sardines

Ask the fishmonger to prepare fresh sardines. Follow the supplier’s cooking instructions, using a grill or suitable pan, and cook the fish thoroughly. Serve soon after cooking.

Fresh fish is an option for a meal when you have time; tins offer a convenient alternative for busy days.

Make one recipe your own

Choose the idea that sounds most appealing, rather than attempting all five. Keep a note of the tin or preparation you liked. Small, repeatable decisions make the next meal easier.
